Carob Syrup (Johannisbrotsirup): What It Is, How It Tastes and How to Use It
on Oct 15, 2026Carob syrup – also called carob molasses, carob pekmez, Johannisbrotsirup or Johannisbrotsaft in Germany – is a thick, plant-based syrup made from the fruit of the carob tree. In Turkey it is known as Keçiboynuzu Pekmezi or Harnup Pekmezi.
What is carob syrup?
Carob pods are boiled and reduced to a dark, thick syrup. It is naturally caffeine-free and plant-based (vegan), and is often used as an alternative to honey or maple syrup.
How does it taste?
Mild-sweet, malty and slightly caramel-like, reminiscent of dark cocoa but without bitterness.
How to use it
- Tahini-pekmez: mix with tahini and enjoy with bread – the classic Turkish breakfast.
- Sweetening: yoghurt, muesli, porridge, pancakes and desserts.
- Baking and cooking: cakes, dressings and marinades.
The flavour is concentrated, so start with a small amount.
